(Note, this is meant as a joke, but the theory has a grain of truth to it.)
(Also, might contain SPOILERS)
Mario keeps getting physically stronger, without losing weight.
Proof? I'll show you proof.
Lets take a look at the first mario game besides the original donkey kong. In that game, you couldn't jump on Bowser to defeat him, you had to cut the ropes to the bridge, making him fall. That means, Mario was NOT powerful enough to do anything to Bowser himself.
Next game, super mario bros. 2, the final boss was Wart. Mario was, again, UNABLE to hit the main villain, due to him being too weak. He had to throw vegetables at him to defeat him. Mario was NOT powerful enough to do anything to the main villain.
Now, in Mario bros. 3, Mario was strong enough to be able to damage the koopa kids without any help, but still not strong enough to defeat Bowser himself without aid. Mario had to trick bowser into ruining the floor to defeat him. Mario was STILL not powerful enough to do anything to bowser himself.
In Super Mario world, the story was the same. Mario had to pick up Mechakoopas to throw at bowser to defeat him. Mario was still not powerful enough.
Now, it's clear that in the first games, Mario was not able to directly hit, or grab or do anything to Bowser himself. He is however, strong enough to hurt the koopa kids.
But then came Mario 64... and in this game, Mario IS able to actually touch bowser. He is still not able to hurt him, but he is strong enough to grab him, and spin him around.
Then came Mario sunshine. In this game, he is unable to hurt or touch bowswer, and has to resort to his brain again. This can be explained because Mario was going on a vacation and therefor, had NOT before to retain his strength.
Then again, in Mario galaxy, Mario was not only able to touch bowser, he was able to physically hurt him WITHOUT the aid of anything but his own fists. In fact, Mario is strong enough to punch Bowser so hard, it knocks him out of the gravity of a small planetoid, which is no small feat.
See? His strength grows between Super mario world, and Mario 64. However... why is Mario still fat? One would think taht being strong enough to hurt a lizard thrice your own size would make you at least a LITTLE slimmer....
Nintendo are sloppy.
THis concludes todays lesson.

It was a scam, there is no such game as New Super Mario Bros.

Then Mario's fat has been replaced by muscle.
His arms and legs aren't bulky, because all the muscle is being contained in his stomach region, to help his stomach digest all those mushrooms.
