Luffy is immune to physical attacks. However, later in the series, he starts to get hurt by punches and kicks...WTF?

I guess he isn't IMMUNE per say. He is somewhat hurt by them, but they can't do much damage to him.
If he were a pokemon it would not be very effective.

He says that he isn't hurt by bullets... I'm sure that if bullets dont hurt him...Not much other things can...

Well, perhaps the bullets very slightly hurt him, but not enough to notice it.
Or maybe Oda just scrapped the idea of having a half invincible main character.
