So, going to start buying the series but where should I start first?
.hack//INFECTION (Part 1)
or
.hack//G.U. Vol. 1 Rebirth

If you want the whole story, from start to finish (for now), I suggest you begin with //Infection. You can start from Rebirth, though. Starting from the very beginning only gives a little bit of background and clears up a few mysteries.

Might as well read a synopsis of the original .hack// trilogy, due to it having a good story, but being overly repetitive and mediocre as a game and being overpriced. I have yet to play the G.U. games, though.
