That isn't a bad list.

Soul Eater is being dubbed by Funimation this year, I think. Smiley

Hm....

I will recommend:
Higurashi No Naku Koro Ni (Higurashi: When they cry) (And if you like that, Higurashi no Naku Koro Ni Kai and Rei, the 2nd and 3rd seasons.)
Gintama (I love the manga, and the anime is great as well. Only downside about the anime, is that some parts are drawn kinda funny.)
History's Strongest Disciple Kenichi (It's pretty good, at least the manga is. Funimation is dubbing it and releasing a box set this month.)
ToraDora (I like this one in a special way. Animation is great.)
and
Hajime No Ippo (Fighting Spirit! in english.) (Also can watch Hajime no Ippo: Champion's Road and New Challenger.)

The best anime of a particularly long length I've watched is Yu Yu Hakusho, at around 112 episodes. Of course, if you don't like it you can stop watching it at any time.

Sayonara, Zetsubou Sensei (Zoku and Goku, too.)

And when it comes to Fullmetal Alchemist, you may want to wait for the new series in April. It's supposed to follow the manga closer, which most people like more, but the first series is still very good, you'll just be getting a lot of repetition for a little while if you watch both.

G Gundam, which Ahriman suggested and I second, is like 50 episodes if you consider that long.

I specifically looked to not recommend Welcome to the NHK just because I don't think it'd be very enjoyable unless you've seen some other anime previously.
