I have to say The Shield. It really had the best ending of a television show that I've seen as well; everything was wrapped up to some degree and the protagonist got exactly what he deserved.

I've never actually watched The Shield to be honest. I think I might like it if it ever hits Hulu.
The question's a tough one since my preferences change really quickly. If I had to compile a list, I'd narrow it down to:
Eureka: Consistently funny and consistently interesting. Somewhat formulaic, but always entertaining. Castle: Just hands down the best characters I've seen on television. It's hard to not like everyone on the main cast. It doesn't hurt that it's witty as hell. Firefly: Yeah... Burn Notice: The writers are genius. I'm always surprised by some of the awesome situations they can come up with. Buffy: Later seasons, not so good, but great cast of characters and balance levels of drama and comedy. Archer: It's unusual when I watch this show and don't **** myself laughing.

Add Babylon 5 (aside from the stuff the scheduling issues caused, i.e. the whole last season) Stargate SG-1 (These are both examples of Sci-fi done RIGHT) Leverage (I can't help but laugh at the ridiculousness, but I feel that the later seasons have gotten a bit stale)

Fringe.
I like this show, but I really, really didn't like the Alternate Dimension arc. It could have been done well, but it was just so drawn out....

If I had watched any of The Wire, I'm pretty sure I'd post that here too.
And I would say 24, but seasons after the first were only decent in comparison. The first season on its own was fantastic.

With the fact that I don't actually watch television shows very often, I would probably have to say: Supernatural Charmed Scrubs
There truthfully the only three shows I've watched on television that I could get into and actually say I really liked. Now, don't ask me much about Supernatural or Charmed. I thought they were unique, I loved there plots, but I never actually watched a whole season of them. I've seen a few episodes and that's about it. But, I really liked how they were set up with the stories.
