It gives them an excuse for totally retooling the gameplay and characters (hopefully) as well as allowing for a shift in the art style.
Besides, I think it's kinda code for them wanting to distance themselves from the **** that was 4.

I feel like Cervantes is too awesome for the timeskip. Plus with Ivy being alive and still young-ified it doesn't bode well for him and jazz.
